Mamy Mei finds in this white tea the refined world of coastal China, a tea marked by its flowery notes that accompany it all day long. The picking of white tea, a Fujian specialty, is particularly fine: only the bud and the youngest shoots are picked. This one comes from the historical production region, the Fuding district, where the tea leaves spent several nights with different jasmine flowers in order to naturally have a wonderful aroma. Relatively low in theine, white tea is often recommended for people sensitive to stimulants, or who find the taste of black and green teas too strong. Most people can drink it until late in the afternoon without hurting it at bedtime. Its light, even subtle taste may encourage you to infuse it for a long time: do not insist too much, you risk causing the bitterness of the jasmine! The delicate aroma of this tea does not lend itself to tea time, since any food would carry the scent.
